Tasty on Kale Pancakes, Salmon & Greens, scrambled eggs & veggies, and who knows what else.
1 10 ounce package frozen peas, thawed
1/4 cup fresh mint leaves (or more)
2 cloves garlic, chopped
1/4 cup olive oil
1/4 cup broth (veggie or chicken, preferably homemade)
salt & pepper to taste
Throw all ingredients into a blender and puree. Add more broth for a thinner sauce. Or leave some out if you want more texture that you can dollop on stuff.
