Red Chile Sauce

This is a tasty way to spice up all kinds of things. Because I use apple cider vinegar, I think even those on the Body Ecology Diet can use it– a joyous addition if you’re feeling deprived.

1 medium red onion, chopped
5 cloves garlic, minced
2 tablespoons olive oil
5 red jalapeños, chopped
10 dried chiles de arbol, broken up
3/4 teaspoon salt
2 cups water
1/4 teaspoon cumin
1/8 teaspoon chipotle powder
1 cup apple cider vinegar

Sauté the onion and garlic for a few minutes. Add the jalapeños and sauté a few minutes more. Add the dried chiles, salt, spices, and water to the pan and bring to a simmer. Simmer until most of the water has cooked off and everything is soft. Remove from heat and let cool.

Put mixture in a blender, add the apple cider vinegar, and blend until smooth. Put on scrambled eggs and veggies, make hot wings with it (recipe to come, courtesy of Kyle), add to the Blue Corn Bread, and more!
